We’re excited to announce the opening of Mosaic Pub and Dining’s latest venue: Bethnal Green Tavern. A modern British pub coming to Bethnal Green, we caught up with their Pub Manager, Harry, to find out more about his vision for the year ahead.
“Bethnal Green has really great restaurants and cocktail bars, or it has very basic, traditional boozers,” Harry explains enthusiastically, “We’re going to slot somewhere right in the middle, doing locally sourced, freshly cooked food, really good cocktails, craft beers, and the premium side of drinks as well.” The Misty Moon pub that used to occupy the site (known to locals as a dimly-lit, old-school pub) is currently undergoing a makeover to transform it into an open, friendly and thoroughly modern pub with a spacious garden, perfect for an August launch. “We’ll be a good all-rounder: family friendly, dog-friendly,” says Harry, “The sort of place everybody can go to.”
An independent hospitality group, Mosaic Pub and Dining let each site take on their own unique character, closely matched to the vibe of the local area. Harry’s induction into the group has been busy — undertaking shifts across their venues, getting a feel for Mosaic’s wider practices and protocols. However, this period has also given Harry greater insight into how Bethnal Green Tavern can offer something different; starting with their food menu. The pub’s main menu, designed by the group’s Executive Chef, will include modern British gastropub dishes including, pizzas and burgers, as well as a wide selection of vegan options. With the food offering established, Harry has been eager to explore options from the local area to add the drinks and cocktail menus. “We’re given quite a lot of freedom to buy in what we like,” Harry explains, “It’s right next to Hackney so we’re getting lots of nice craft ale and beer from around there.”
Bethnal Green Tavern also offers Harry a change of scene and new challenges in his own career. As former Bar Manager for Revolution Bars and karaoke bar company, Lucky Voice, Harry is looking forward to having a more direct influence over the creative direction of Bethnal Green Tavern from its inception. Live music nights and pub quizzes are just a few of the ideas he has in mind to differentiate Bethnal Green Tavern from other local spots, but his first priority is getting the site up and running, and drawing in the locals. “We want to do a massive opening night with friends, family, everyone who’s worked to get it to where it is. Just a big party really!”. With the site development well underway, Harry’s now looking to build his team. Experience is not essential, but a positive mindset and eagerness to learn are both a high priority for new hires. “We can train you from start to finish,” Harry explains. “In some ways, I prefer that, because it helps you to bond and learn as a team. We need those friendly, inviting people who are going to keep the clientele coming back.”
